Ingredients

For this recipe, you’ll need:

For the Papas con Chorizo:

  • 3 lbs. potatoes, cut into ½-inch cubes
  • 2 tablespoons salt
  • 3 lbs. Mexican chorizo sausage, casings removed
  • 1½ lbs. white onion, finely chopped

For the Avocado Salsa (Salsa de Aguacate):

  • 1 lb. tomatillos, husks removed and chopped
  • 4 garlic cloves
  • 2–4 serrano chiles, stems removed
  • 2 lbs. ripe avocados, peeled and pitted
  • Salt, to taste

For Serving:

  • 48 corn tortillas, warmed

Preparation

1. Boil the Potatoes

Bring 4 quarts of water to a boil in a large pot. Add the diced potatoes and salt.

Cook for approximately 10 minutes, or until the potatoes are tender. Drain thoroughly and set aside.

2. Cook the Chorizo and Onions

In a large, well-seasoned skillet, sauté pan, or griddle over medium heat, combine the Mexican chorizo and finely chopped white onion.

Cook for approximately 10 minutes, stirring occasionally, until the chorizo is fully cooked and the onions are soft.

Drain off any excess fat.

3. Add the Potatoes

Add the cooked potatoes to the chorizo and onion mixture.

Using a spatula, gently mash and stir the potatoes into the chorizo. Continue cooking for approximately 8 minutes, or until the potatoes begin to brown and develop a slightly crispy texture.

Cover and keep warm until ready to serve.

4. Prepare the Avocado Salsa

In a food processor, combine the chopped tomatillos, garlic cloves, and serrano chiles.

Pulse until the ingredients are finely chopped.

Add the ripe avocados and process until the mixture is smooth and creamy, with a consistency similar to light mayonnaise.

Season with salt to taste.

5. Warm the Tortillas

Warm the corn tortillas using your preferred method until soft and pliable.

6. Assemble the Potato and Chorizo Tacos

For each serving, divide approximately ⅔ cup of the warm potato and chorizo mixture between two corn tortillas.

Fold each tortilla in half to form a taco.

7. Add the Avocado Salsa and Serve

Top each serving with approximately 2 tablespoons of avocado salsa.

Serve immediately while the tacos are warm.
