Ingredients

For this recipe, you’ll need:

For the Grilled Potato Wedges:

  • 1 (1 lb.) package A Cut Above® Fresh-Cut Potato Wedges
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

For the Caramelized Onion and Chive Sauce:

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, quartered and thinly sliced
  • 1 cup fat-free Greek yogurt
  • ¼ cup sliced fresh chives or green onion tops
  • 2 tablespoons fresh rosemary leaves
  • Fine sea salt and freshly ground black pepper, to taste

For the Red Pepper Basil Sauce:

  • ½ cup fat-free Greek yogurt
  • ½ cup roasted red peppers, drained and patted dry
  • 2 cloves garlic
  • ¼ cup sliced green onions
  • ¼ cup fresh basil leaves
  • Fine sea salt and freshly ground black pepper, to taste

For the Avocado Cilantro Sauce:

  • ¾ cup fat-free Greek yogurt
  • 1 ripe avocado, peeled and pitted
  • 2 cloves garlic
  • ¼ cup lightly packed fresh cilantro leaves
  • ½ tablespoon lime juice
  • Fine sea salt and freshly ground black pepper, to taste

Preparation

1. Prepare the Potato Wedges

Place the A Cut Above® Fresh-Cut Potato Wedges in a large bowl. Drizzle with olive oil and season with salt and black pepper. Toss until evenly coated.

2. Grill the Potatoes

Preheat your grill to medium-high heat. Arrange the potato wedges on the grill and cook for approximately 10 minutes, turning once or twice, until lightly charred and cooked through.

If your grill has wide grates, place a sheet of aluminum foil underneath the potatoes to prevent them from falling through.

3. Make the Caramelized Onion and Chive Sauce

Heat the extra-virgin olive oil in a medium skillet. Add the sliced onion and cook over low heat for approximately 20 minutes, stirring frequently, until caramelized. Allow the onions to cool.

Transfer the cooled onions to a blender or food processor. Add the Greek yogurt, chives, and fresh rosemary. Blend until smooth, then season with salt and black pepper to taste.

4. Make the Red Pepper Basil Sauce

In a blender or small food processor, combine the Greek yogurt, roasted red peppers, garlic, green onions, and fresh basil.

Blend until smooth and creamy. Season with salt and freshly ground black pepper to taste.

5. Make the Avocado Cilantro Sauce

Combine the Greek yogurt, ripe avocado, garlic, cilantro, and lime juice in a blender or small food processor.

Blend until smooth and creamy, then season with salt and black pepper to taste.

6. Serve and Enjoy

Transfer the grilled potato wedges to a serving platter and arrange the three Greek yogurt dipping sauces alongside them. Serve warm and enjoy your favorite combination.
