Ingredients

For this recipe, you’ll need:

For the Chicken and Potatoes:

  • 6 bone-in, skin-on chicken thighs
  • 1½ lbs. Side Delights® Gourmet Petite Pure Gold Potatoes
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1½ teaspoons salt, divided
  • 1 teaspoon black pepper, divided
  • 2 teaspoons fresh thyme, or 1 teaspoon dried thyme

For the White Wine Butter Sauce:

  • ¾ cup dry white wine
  • 2 tablespoons butter

Preparation

1. Preheat the Oven

Preheat your oven to 400°F.

Remove the chicken thighs from the refrigerator while you prepare the potatoes.

2. Prepare the Petite Potatoes

Cut the Side Delights® Gourmet Petite Pure Gold Potatoes in half and place them in a large mixing bowl.

Add the minced garlic, olive oil, lemon juice, 1 teaspoon of salt, ½ teaspoon of black pepper, and thyme.

Toss until the potatoes are evenly coated.

Transfer the potatoes to one side of a large, rimmed baking sheet, leaving the remaining lemon garlic mixture in the bowl.

3. Season the Chicken

Arrange the chicken thighs on the other side of the baking sheet.

Pour the remaining lemon garlic mixture over the chicken, coating each piece evenly.

Sprinkle the remaining ½ teaspoon of salt and ½ teaspoon of black pepper over the chicken and potatoes.

4. Roast the Chicken and Potatoes

Place the baking sheet in the preheated oven and roast for approximately 40–50 minutes.

The potatoes should be tender and golden brown, and the chicken should reach an internal temperature of 165°F when measured with a food thermometer.

Once fully cooked, remove the baking sheet from the oven.

5. Prepare the White Wine Butter Sauce

For an extra layer of flavor, finish the dish with the white wine butter sauce.

Transfer the roasted chicken and potatoes to a serving platter.

Pour the white wine directly onto the baking sheet and carefully scrape up the flavorful browned bits left behind from roasting.

Place a mesh strainer over a medium saucepan and pour the wine and pan drippings through the strainer.

Add the butter and heat over medium-high heat until the mixture comes to a boil.

Reduce the heat to low and simmer for approximately 10 minutes.

6. Serve and Enjoy

Pour half of the white wine butter sauce over the roasted chicken and potatoes.

Serve immediately, with the remaining sauce available on the side.

If you prefer to skip the sauce, the lemon garlic chicken and potatoes are delicious straight from the oven.

What Are the Best Potatoes for a Sheet Pan Dinner?

Petite potatoes are a great choice for sheet pan meals because their small size makes them easy to prepare and roast alongside other ingredients.

Side Delights® Gourmet Petite Pure Gold Potatoes have a naturally creamy texture and buttery flavor that pair perfectly with roasted chicken, garlic, lemon, and fresh herbs. Their thin skins can be left on, saving preparation time while adding texture to the finished dish.

For this recipe, simply halve the potatoes before seasoning and roasting. Red and mixed-color petite potatoes are also great options.

Tips for Making the Best Sheet Pan Chicken and Potatoes

Whether you’re preparing a quick weeknight dinner or planning a holiday meal, a few simple tips can help you get the best results from this easy one-pan recipe.

  • Cut potatoes evenly: Halving similarly sized petite potatoes helps them cook at approximately the same rate.
  • Use a rimmed baking sheet: The raised edges help contain the juices released during roasting.
  • Avoid overcrowding: Give the chicken and potatoes enough space to promote even cooking and browning.
  • Check the chicken temperature: Use a food thermometer to confirm the chicken has reached 165°F.
  • Customize the sauce: The white wine butter sauce adds richness, but the dish is equally delicious without it.
