Purple potatoes are more than just vibrant — they naturally contain anthocyanins, powerful antioxidants that may offer health benefits. Their purple hue adds a pop of color to many dishes, from salads to roasts. These potatoes are typically medium-sized and have a signature rounded oblong shape with a few deep-set eyes. 

The vibrant skins and flesh help them stand out on shelves, grabbing the attention of curious customers. Purple potatoes are sometimes referred to as blue potatoes. Their shades range from pastel to deep purple and occasionally a striking violet. Our purple potatoes have a subtle, earthy flavor and thin skin that roasts to a delicate crisp. • Purées: Boil and puree purple potatoes and fold in crème fraîche and butter for a colorful lavender mash that brings vibrancy to any plate. 
• Candied purple potatoes: Coat purple potatoes in sugar and butter and roast until perfectly caramelized. Top with toasted pecans and marshmallows, and broil for a sweet treat. 
• Frittatas: Slice and sautée purple potatoes, then gently fold them into eggs and cook on medium heat until lightly crisp and fluffy. The purple potatoes add a gorgeous marbling effect to frittatas. 
• Fries: Purple potatoes hold their beautiful color when fried and get a nice crisp. For extra crunch, toss them in a light dusting of corn flour before frying.
