Ingredients

For this recipe, you’ll need:

  • 1 (1 lb.) package A Cut Above® Fresh-Cut Diced Potatoes
  • 2 tablespoons olive or avocado oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • Cooking oil spray, as needed
  • 1 tablespoon Everything Bagel Seasoning
  • ¾ tablespoon chopped fresh parsley
  • Fried eggs, for serving

1. Season the Potatoes

Place the A Cut Above® Fresh-Cut Diced Potatoes in a large bowl. Add the olive or avocado oil and toss until evenly coated. Season with salt and black pepper.

2. Preheat the Air Fryer

Preheat your air fryer to 400°F. Lightly spray the basket with cooking oil to help prevent sticking.

3. Air-Fry Until Crispy

Place the potatoes in the air fryer basket in an even layer. Cook for 15 minutes, then shake the basket to turn the potatoes. Continue cooking for another 5 minutes, or until golden brown and crispy on the outside and fluffy inside.

4. Add the Seasoning

Transfer the cooked potatoes to a serving bowl. While still hot, toss with Everything Bagel Seasoning and fresh parsley.

5. Serve and Enjoy

Serve your crispy breakfast potatoes alongside fried eggs or your favorite breakfast dish.
