Ingredients

For this recipe, you’ll need:

  • 3 pounds red potatoes, scrubbed
  • 2 cloves garlic, peeled
  • 1 small onion, peeled and halved
  • 1/4 cup all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon dry mustard
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon freshly ground pepper
  • 3 cups low-fat milk, divided
  • 1 1/3 cups shredded sharp Cheddar cheese, divided
  • 1/2 cup fine dry breadcrumbs
  • 2 teaspoons extra-virgin olive oil

Preparation

1. Preheat the Oven

Preheat your oven to 350°F. Lightly coat a 9-by-13-inch baking dish with cooking spray and set aside.

2. Boil the Potatoes

Place the scrubbed red potatoes in a large saucepan and cover with cold, salted water.

Bring to a boil, then reduce the heat to medium. Cover and cook for approximately 10–12 minutes, or until the potatoes are just barely tender.

Drain the potatoes, allow them to cool, and carefully remove the skins.

3. Shred the Potatoes

Using a food processor or the large holes of a box grater, coarsely shred the cooked potatoes.

Transfer to a large mixing bowl and set aside.

4. Prepare the Cheese Sauce

In a food processor, combine the garlic, onion, flour, salt, dry mustard, cayenne pepper, and black pepper. Pulse until finely chopped.

Add ½ cup of milk and process until smooth.

Transfer the mixture to a medium saucepan and stir in the remaining 2½ cups of milk.

Bring to a simmer over medium heat, stirring constantly. Continue cooking for approximately 5 minutes, or until the sauce thickens.

Remove from the heat and stir in 1 cup of shredded sharp cheddar cheese until melted and smooth.

5. Combine the Potatoes and Cheese Sauce

Pour the warm cheese sauce over the shredded red potatoes.

Gently stir until the potatoes are evenly coated, then transfer the mixture to the prepared baking dish and spread into an even layer.

6. Prepare the Breadcrumb Topping

In a small bowl, combine the remaining ⅓ cup shredded cheddar cheese, dry breadcrumbs, and extra-virgin olive oil.

Season with additional salt and black pepper to taste. Mix gently with your fingers until the ingredients are evenly combined.

Sprinkle the breadcrumb mixture evenly over the potatoes.

7. Bake Until Golden Brown

Cover the baking dish with aluminum foil and bake for 40 minutes.

Remove the foil and continue baking for approximately 20 minutes, or until the topping is golden brown and the cheese sauce is bubbling.

8. Let Stand and Serve

Remove the cheesy potato casserole from the oven and allow it to rest for approximately 10 minutes before serving.

Serve warm alongside your favorite main dish.

Optional: Garnish with your favorite green herbs!
