Ingredients

For this recipe, you’ll need:

For the Crispy Potato Wedges:

  • 2 (1 lb.) packages A Cut Above® Fresh-Cut Potato Wedges
  • Olive oil cooking spray, as needed
  • 1½ teaspoons sea salt

For the Picadillo:

  • 1 tablespoon olive oil
  • 1 lb. lean ground turkey
  • 1 cup chopped yellow onion
  • 3 garlic cloves, thinly sliced
  • 10 oz. tomato purée
  • 3 tablespoons smoked paprika
  • 2 cups chicken stock
  • ½ tablespoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ¼ cup raisins
  • ½ cup sliced Spanish olives
  • 1 teaspoon sea salt
  • ½ teaspoon cayenne pepper
  • 1 teaspoon ground black pepper

For Garnish:

  • ¼ cup finely chopped fresh chives

Preparation

1. Prepare the Potato Wedges

Preheat your oven to 400°F. Arrange the A Cut Above® Fresh-Cut Potato Wedges in a single layer on a large baking sheet. Lightly coat with olive oil cooking spray and season with sea salt.

3. Brown the Ground Turkey

While the potatoes roast, heat 1 tablespoon olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it into smaller pieces, until browned.

4. Add the Onion and Garlic

Reduce the heat to medium. Add the chopped yellow onion and sliced garlic to the turkey. Cook, stirring regularly, until the onions become translucent but not browned.

5. Add the Tomato Sauce and Paprika

Stir in the tomato purée and smoked paprika. Continue cooking for approximately 10 minutes, allowing the tomato sauce to reduce by half and develop a rich, concentrated flavor.

6. Simmer the Picadillo

Add the chicken stock, ground cumin, coriander, cinnamon, and raisins. Stir to combine and allow the mixture to simmer for approximately 15 minutes.

Add the sliced Spanish olives, sea salt, cayenne pepper, and black pepper. Continue simmering for another 5 minutes, allowing the flavors to come together.

7. Assemble and Serve

Arrange the crispy potato wedges on a serving platter or individual plates. Spoon the warm picadillo over the potatoes and garnish with freshly chopped chives.

Serve immediately as a hearty appetizer or complete meal.

This easy picadillo recipe combines crispy roasted potato wedges with a rich, savory ground turkey mixture for a satisfying dish that’s perfect for sharing. The combination of warm spices, sweet raisins, and Spanish olives adds plenty of flavor, while the golden potato wedges make a delicious base.
