These twice-baked potatoes with kale, leeks, and Parmesan are a flavorful twist on a classic potato side dish. Made with fluffy Idaho baking potatoes, sautéed kale and leeks, and savory Parmesan cheese, this recipe combines a creamy potato filling with crispy baked potato skins. Perfect for family dinners, holiday gatherings, or a hearty side dish, these twice-baked potatoes are a delicious way to add vegetables to your plate.
Preheat your oven to 400°F. Using a fork, poke approximately 10 deep holes throughout each potato to allow steam to escape while baking.
Place the potatoes on a baking sheet and bake for approximately 1 hour, or until the skins are crispy and the centers are tender.
Remove the potatoes from the oven and allow them to cool for approximately 10 minutes.
Slice each potato in half lengthwise. Carefully scoop the flesh into a large mixing bowl, leaving the potato skins intact for filling later.
Add ½ cup of chicken stock to the cooked potato flesh. Mash until smooth and creamy, then set aside.
In a large saucepan over medium heat, combine the olive oil and butter.
Add the chopped leeks and kale, stirring occasionally, and sauté for approximately 6–7 minutes until tender.
Pour in the remaining ½ cup of chicken stock and continue simmering until the liquid has been absorbed.
Add the sautéed kale and leeks to the mashed potatoes. Season with salt and freshly ground black pepper to taste.
Stir in ¼ cup of grated Parmesan cheese until evenly combined.
Divide the potato mixture evenly among the hollowed-out potato skins.
Sprinkle the remaining ¼ cup of Parmesan cheese over the filled potatoes.
Return the stuffed potatoes to the oven and bake for an additional 10–15 minutes, or until heated through and the Parmesan cheese is lightly golden.
Remove the twice-baked potatoes from the oven and garnish with freshly chopped chives. Add additional Parmesan cheese, salt, or black pepper to taste.
Serve warm alongside your favorite main dish.

These twice-baked potatoes with kale, leeks, and Parmesan bring together fluffy baked potatoes, tender vegetables, and savory cheese for a comforting side dish. The combination of crispy potato skins and creamy filling makes them a great addition to everyday meals or special occasions.
