Ingredients

For this recipe, you’ll need:

  • 1 (1 lb.) package A Cut Above® Fresh-Cut Sliced Potatoes
  • 2 tablespoons olive or avocado oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 4 oz. garlic and herb soft cheese, such as Boursin
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (optional)

Preparation

1. Boil the Potatoes

Bring a large pot of lightly salted water to a boil. Add the A Cut Above® Fresh-Cut Sliced Potatoes and cook for approximately 5–7 minutes, until just beginning to soften but still holding their shape.

2. Drain and Dry

Carefully drain the potatoes and allow them to dry for a few minutes. Pat gently with paper towels to remove excess moisture before frying.

3. Pan-Fry Until Golden

Heat olive or avocado oil in a large oven-safe skillet over medium-high heat. Add the potato slices in a single layer, working in batches if necessary. Cook for approximately 3–4 minutes per side, until golden brown and crispy.

4. Season the Potatoes

Transfer the cooked potatoes to a paper towel-lined plate to absorb excess oil. Sprinkle with sea salt and black pepper.

5. Add the Garlic and Herb Cheese

Preheat your oven to 375°F. Return the crispy potato slices to the oven-safe skillet, arranging them in an even layer. Distribute small spoonfuls of garlic and herb cheese over the potatoes.

6. Bake Until Creamy

Transfer the skillet to the oven and bake for approximately 5–8 minutes, or until the cheese is warm, softened, and beginning to melt over the potatoes.

7. Finish with Lemon

Remove the skillet from the oven and drizzle with fresh lemon juice. Garnish with chopped parsley, if desired, and serve warm.

These garlic and herb skillet potatoes combine crispy potato rounds with rich, creamy cheese for an easy side dish. A Cut Above® Fresh-Cut Potatoes make preparation simple, allowing you to spend less time slicing and more time enjoying a homemade meal.
