Ingredients

For this recipe, you’ll need:

For the Buffalo Smashed Potatoes:

  • 1½ lbs. Side Delights® Red and Yellow Petite Potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 cloves garlic, unpeeled
  • ¼ cup buffalo wing sauce
  • ½ teaspoon sugar

For the Blue Cheese Yogurt Dip:

  • ⅓ cup nonfat plain Greek yogurt
  • ¼ cup crumbled reduced-fat blue cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder

Preparation

1. Preheat the Oven

Preheat your oven to 450°F. Line a large baking sheet with parchment paper or aluminum foil and set aside.

2. Boil the Potatoes

Place the Side Delights® Red and Yellow Petite Potatoes in a large pot and add enough water to cover them.

Bring to a boil, then reduce the heat and simmer for approximately 25 minutes, or until the potatoes are tender when pierced with a fork.

The potatoes should be fully cooked but still hold their shape. Avoid overcooking, as they need to remain intact when smashed.

Drain the potatoes and allow them to cool for approximately 10 minutes.

3. Smash and Season the Potatoes

Arrange the cooled potatoes on the prepared baking sheet, leaving approximately 1 inch between each potato.

Using the palm of your hand, gently press down on each potato until it splits open and is approximately ½ inch thick, while remaining in one piece.

Brush the potatoes with olive oil, turning to coat both sides. Sprinkle evenly with salt and black pepper.

4. Roast Until Golden

Place the baking sheet in the preheated oven and roast for approximately 20 minutes, allowing the potatoes to develop golden, crispy edges.

5. Prepare the Buffalo Garlic Sauce

While the potatoes roast, place the unpeeled garlic cloves in the microwave and heat on high for 30 seconds to soften and mellow their flavor.

Carefully peel the garlic and transfer it to a small blender or food processor.

Add the buffalo wing sauce and sugar, then blend until smooth.

6. Coat the Potatoes with Buffalo Sauce

Remove the potatoes from the oven and brush both sides with the buffalo garlic sauce.

Return the baking sheet to the oven and roast for an additional 5–10 minutes, or until the potato edges are crispy and golden brown.

7. Prepare the Blue Cheese Yogurt Dip

While the potatoes finish roasting, combine the Greek yogurt, crumbled blue cheese, lemon juice, and garlic powder in a medium bowl.

Stir until well combined and creamy.

8. Serve and Enjoy

Transfer the crispy buffalo smashed potatoes to a serving platter and serve warm alongside the blue cheese yogurt dip.

Enjoy as an appetizer, game-day snack, or flavorful side dish.
