Ingredients

For this recipe, you’ll need:

For the Roasted Potato Salad:

  • 1½ lbs. Side Delights® Fingerling Potatoes, cut into ½-inch rounds
  • 1 red bell pepper, cut into 1-inch cubes
  • 1 red onion, cut into 1-inch cubes, keeping the layers together
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper

For the Lemon Thyme Dressing:

  • ¼ cup light or olive oil-based mayonnaise
  • 1½ tablespoons fresh lemon juice
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons fresh thyme leaves
  • 1½ teaspoons lemon zest
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper

Preparation

1. Preheat the Oven

Preheat your oven to 425°F. Prepare a large baking sheet for roasting the potatoes and vegetables.

    2. Season the Potatoes and Vegetables

In a large mixing bowl, combine the sliced Side Delights® Fingerling Potatoes, red bell pepper, and red onion.

Drizzle with olive oil and season with kosher salt and black pepper. Toss until all the vegetables are evenly coated.

    3. Roast Until Golden

Spread the seasoned potatoes and vegetables in a single layer on the baking sheet.

Roast for approximately 20–25 minutes, or until the potatoes begin to brown and are tender.

Remove from the oven and allow the roasted vegetables to cool for at least 10 minutes.

    4. Prepare the Lemon Thyme Dressing

While the vegetables cool, combine the mayonnaise, lemon juice, olive oil, fresh thyme leaves, lemon zest, kosher salt, and black pepper in a medium bowl.

Whisk until smooth and well combined.

    5. Toss and Serve

Transfer the cooled roasted potatoes and vegetables to a large serving bowl.

Pour the lemon thyme dressing over the mixture and gently toss until evenly coated.

Serve at room temperature or refrigerate until chilled.
