Bright, herby, and loaded with feta, this Greek-inspired breakfast hash brings Mediterranean flavor to your morning skillet. Flavorables® Petite Potatoes are perfectly seasoned with our Greek Freak Mediterranean Seasoning, then combined with sautéed vegetables, fluffy scrambled eggs, and creamy feta cheese. A squeeze of fresh lemon juice ties everything together, creating a fresh, savory breakfast that’s ready in minutes and perfect for busy mornings or weekend brunch.

Ingredients

For this recipe, you’ll need:

  • 1 package (1 lb) Flavorables® Petite Potatoes with Greek Freak Seasoning
  • 1 tablespoon butter, divided
  • 2 large eggs
  • ¼ cup diced onion
  • ¼ cup diced red bell pepper
  • 1 cup fresh spinach
  • ⅓ cup crumbled feta cheese, plus more for garnish
  • Juice of ½ lemon
  • Fresh parsley, chopped, for garnish

1. Prepare the Potatoes

Microwave the Flavorables® potatoes according to the package directions, about 5 minutes, or until tender.

Add ½ tablespoon of butter and the included Spiceology Greek Freak seasoning packet directly to the bag. Seal and gently shake until the potatoes are evenly coated.

Cut the seasoned potatoes into bite-sized pieces and set aside.

2. Cook the Vegetables

Beat the eggs in a small bowl and set aside.

Heat the remaining ½ tablespoon of butter in a large skillet over medium heat. Add the diced onion and red bell pepper and cook for 3–4 minutes, or until softened.

Stir in the spinach and cook just until wilted.

3. Scramble the Eggs

Pour the beaten eggs into the skillet with the vegetables.

Cook gently, stirring occasionally, until the eggs are just set and fluffy.

4. Combine Everything

Add the seasoned potatoes and crumbled feta cheese to the skillet.

Gently stir everything together, then squeeze the fresh lemon juice over the hash and mix until evenly combined.

5. Garnish and Serve

Transfer the hash to serving bowls.

Top with additional feta cheese and fresh chopped parsley before serving.

Enjoy immediately while warm.
