For this recipe, you’ll need:
Microwave the Flavorables® potatoes according to the package directions, about 5 minutes, or until tender.
Transfer the cooked potatoes to a cutting board and gently smash them with the back of a measuring cup or sturdy spatula until they form a rough mash.
Place the smashed potatoes in a large mixing bowl.
Add the grated parmesan, breadcrumbs, egg, sliced green onions, and the included Garlic Parmesan seasoning packet.
Mix until all the ingredients are evenly combined.
Using your hands or a scoop, divide the mixture into equal portions and shape into patties about ½-inch thick.
If the mixture feels too soft, refrigerate for 10–15 minutes before frying to help the cakes hold their shape.
Heat a thin layer of oil in a large skillet over medium heat.
Cook the potato cakes for 3–4 minutes per side, or until golden brown and crispy on both sides.
Transfer to a paper towel-lined plate to drain any excess oil.
